Trembling Art: Pastry chef creates incredible 3D jelly cakes

Pastry chef Sue Heng Boon creates cakes that don't really look like something edible. Her transparent creations are more like heavy glass products with flowers inside. Jelly 3D cakes (as they are called) are made of gelatin, and complex patterns are drawn using special tools that inject color.

Boone Cakes are a great example of how food turns into art. Sue became interested in making 3D jelly a few years ago when her mother's neighbor brought such a cake. The dessert intrigued Boone so much that she signed up for a cooking course with a famous 3D jelly art teacher in Malaysia (such exist, it turns out). The pastry chef opened her own Jelly Alchemy business in Sydney (translated as "jelly alchemy").

So, what is jelly cake made of? First, jelly of different colors is heated to bring to a liquid state, then injected into a transparent base using special tools. After decorating, a layer of jelly with taste is added on top.
